Our woods are air dried for 18 to 24 months or kiln dried to 8% humidity, then shaved to a fine rolled leaf or flake, the optimal composition for the extraction of culinary flavor for smoke infusions. Foghat Culinary Smoking Fuel - Bourbon Resurrection is a cocktail made from aged oak with dried fruits and berries, spices, florals and teas. This medium smoke profile includes vanilla, caramel, honey and butterscotch. Fruit and floral flavors, such as apple, pear, dark fruit (figs, raisins, dates), citrus and rose. Spice flavors, including black pepper, tobacco leaf, nutmeg, clove and cinnamon.
